Here's a great snack. I take jerky on the boat for fishing or have a bite after working out. I use a fairly inexpensive roast and freeze it to start. Then, I partly defrost it before cutting it. The "stiffness" helps in making more consistent cuts. I take my meat slicer and cut the roast as thick as possible. That makes for about one inch slabs. I then set the thickness to number 6 which approximates a thick piece of bacon. It's still a little inconsistent thickness when slicing, but given enough time in the dehydrator, it works quite well. I slice across the grain to prevent stringiness. I mix the marinade and thoroughly mix with the sliced meat and refrigerate 2+ hours. My dehydrator is a good quality 700 watt machine, so this takes about 8 hours. If you have a lower wattage dehydrator, it'll take longer.
INGREDIENTS
3 cloves garlic, minced
1/4 oz pickled ginger
1/2 c soy sauce
1/4 c teriyaki sauce
Mix and heat 90 seconds in the microwave. Let it cool before adding to meat.
