INGREDIENTS
- 3 large sweet potatoes
- 2 T butter
- 1 1/2 tsp sage
DIRECTIONS
You can cook these like Irish potatoes in the microwave. Just pierce all over with a fork and place in microwave. Cook around 5 minutes on each side till done. For real excitement, don't pierce and maybe they'll explode!
When done, cut in half and scoop out potato. Discard skins. Throw in the butter and sage and mash thoroughly until smooth.
